1 tablespoon Cajun seasoning mix
1 tablespoon brown sugar
4 pieces boneless white fish
1 small avocado, chopped
310g can corn kernels, drained
2 tomatoes, chopped
2 spring or green onions, sliced
1/4 cup low-fat French dressing


1. Preheat the oven to a moderate 180 C (160 C fan forced). Line a tray with baking paper. Combine spice and sugar. Spray fish lightly with olive oil and roll in combined spices - fish should be just coated.

2. Place fish onto the tray and bake for 8-10 min or until cooked through. Meanwhile, combine remaining ingredients and season with salt and pepper. Serve fish with salsa and lime wedges.
