Frozen cocktails are major news in all of our favourite bars this year and here’s how you can make your own at home.

Pelicano resident mixologist Alex Raclet‘s Frosé
60 ml rosé
45 ml strawberry syrup
30 ml fresh squeeze watermelon
30 ml fresh squeeze lemon juice
30ml Fresh squeeze lemon juice
20ml Lillet Blanc vermouth
20ml Sugar syrup
20ml Soda water
Blend ingredients together with ice.
Longrain's Coco Kaffir Colada
45ml aged Caribbean rum
15ml Crème de Cacao blanc
30ml Pineapple juice
30ml Sugar syrup
1 kaffir Lime leaf
1 Scoop coconut sorbet (Messina makes a delicious version)
1 Handful of ice
Blend until smooth and icy. Serve in a hollowed out coconut shell and enjoy by the pool in a tiki shirt or grass skirt.
To make the sugar syrup mix sugar and boiling water in a ratio of 1:1.
Ms.G’s Ho Lee Fook Slushee
1 batch/25 people
Water ratio 1:5:1 (concentrate to water)
30ml Olmeca Plata tequila
100ml Cranberry juice
300ml Agave syrup
20ml Lime juice
Blend all the ingredients together with ice and serve.
