Ingredients

6 dried apricots
250ml (9fl oz/1 cup) orange juice
400g (14 oz) mixed dried fruit (try sultanas, currants or raisins)
1 teaspoon mixed spice
1 teaspoon ground cinnamon
260g (91/4 oz/1 cup) cold mashed pumpkin
200g (7 oz/1 2/3 cups) spelt flour
3 teaspoons baking powder

Method

Combine the apricots and orange juice in a saucepan and bring to the boil. Turn off the heat and leave the apricots to soften. Once soft, put in a blender and blend until smooth.

Return the apricots
