How to make Wayne Carey's favourite pre-game pasta dish: penne Amatriciana

8 slices Pancetta
1 brown onion, diced
Olive oil
1/3 cup dry white
4 x fresh ripe tomatoes
2 fresh red birdseye chillies
Strong pecorino
Penne pasta
Method
Method
1. In a pot bring salty water to the boil… this is for the pasta a little bit later.
2. Meanwhile, place the onion and olive oil in a fry pan on medium heat and sauté until transparent.
2. Deglaze the pan with the wine then add the pancetta and cook for a couple of minutes until the fat has slightly rendered.
3. Add the chillies and tomatoes giving everything a good stir before letting it sit and simmer for a few minutes.
4. Once the tomatoes have broken down into a sauce you can add an optional sprinkling of pecorino (Duck (Wayne Carey) isn't partial to this part, but I am!) and a season with salt and pepper.
5. If is looks like the sauce is too thick you can add a splash of water.
6. Simmer on low whilst you add the penne to the boiling water and cook for 8 minutes.
7. Serve with a generous helping of pecorino and of course some crusty break with butter!
