Ingredients

175g unsalted butter
¼ cup icing sugar, sifted
1tsp vanilla bean extract
1 cup plain flour, sifted
¼ cup cornflour, sifted

LEMON FILLING
60g unsalted butter, softened
1 cup cup icing sugar, sifted
1 tbs lemon rind
1 tbs lemon juice

Method

Pre heat the oven up to 180 degrees.

Pop the butter, icing sugar and vanilla in a bowl and beat until light and fluffy.

Add the flour and cornflour and mix until it comes together to form a dough.

Roll tablespoons of dough onto a tray lined with baking paper, making sure they have at least 1cm between them.

Squish each ball of dough with the back of a fork. Place in the oven for 8 minutes or until slightly golden.

Transfer onto a wire rack to cool completely.

To make the filling, place the sugar and butter into a bowl and beat until creamy then add the zest and lemon juice. Continue to beat until fluffy and completely combined.

Spread a tablespoon of the mixture onto each biscuit round and then sandwich another biscuit on top.
