Brussels sprouts and pear salad

Ingredients

2 quantities of simple vinaigrette made with lemon juice
2 teaspoons runny honey
400 g Brussels sprouts, in fine strips, ideally cut with a mandoline
80 g pecan nuts, chopped
40 g goji berries
1 large pear or 2 small firm pears
salt and pepper

Method

Mix the vinaigrette and honey and set aside.

Combine the Brussels sprouts, pecan nuts and goji berries.

Cut the pear(s) horizontally into fine slices, ideally using a mandoline, then cut into matchsticks. Add them to the sprouts. Drizzle with vinaigrette, then season with a generous amount of salt and pepper. Serve immediately.
