Ash Pollard's Camp Cupcakes

Ingredients

1 cup flour
¾ cup caster sug
1½ tsp baking powder
Pinch salt
40g unsalted butter
120ml full cream milk
1 egg
¼ tsp vanilla bean paste
Food colouring (your choice - go wild)
For Cream Cheese Frosting
5 cups icing sugar
100g unsalted butter
250g cream cheese (cold)
Hundreds and thousands

Method

Pre heat the oven to 180 degrees and line a muffin tin with paper cases.

In a freestanding electric mixer beat the flour, sugar, baking powder, salt and butter until it becomes a sandy looking consistency. Gradually pour in the milk, add the egg and vanilla and continue to mix until just combined.

Separate the mixture into separate bowls, enough depending on how may colours you want to create. Add a few drops of food colouring to each then build your cupcakes by adding a layer of colour to each paper case. Go wild, it’s likely to turn out unlike you planned!!!

Pop the tray into the oven for 20-25 minutes or until the cupcakes bounce back when touched. Transfer onto a cooling rack.

To make the frosting, pop the icing sugar and butter into a stand up mixer and mix until the mixture resembles bread crumbs. Add all the cream cheese in at once and beat until it becomes smooth and free from any bits of butter and icing sugar.

Once the cupcakes have cooled down, dollop a generous amount of cream cheese icing on top of each and then sprinkle with hundreds and thousands. Enjoy the colours and the crazy surprise once you bite into them. Eating these makes you feel happy!!
