Bean & Vegetable Stew

2 cloves crushed garlic
12 halved button mushrooms
2 chopped carrots
2 diced potatoes
1/2 cup red wine
2 tablespoons tomato paste
1 cup vegetable stock
1 cup chopped beans
400g can drained cannellini beans


1. Heat a little oil in a pan, add crushed garlic, mushrooms, chopped carrots and diced potatoes. Cook for 3-4 min.

2. Add red wine, tomato paste, vegetable stock and simmer for 10 min, stir in chopped beans and a drained cannellini beans. Simmer for 2 min before serving with crusty bread. Garnish with parsley.
