4 large brown onions, thinly sliced
1 teaspoon brown sugar
2 tablespoons plain flour
8 cups beef stock
30cm French stick, cut into 2cm-thick slices
1/2 cup tasty grated cheese
1. Melt butter in a large saucepan over a low heat. Add onion and sugar, cook for 20 min, stirring occasionally until onion is golden-brown.
2. Sprinkle over flour and stir to combine, cook 2 min. Increase heat to medium and add stock and season with salt and white pepper. Cover and cook for 30 min. Toast French-stick pieces and top with cheese. Grill and serve with bowls of hot soup.
