4 medium potatoes, skins on
1 tablespoon butter
1 tablespoon plain flour
1 cup milk
1 cup chopped baby spinach
1 cup grated tasty cheese
1. Preheat oven to 180 C. Prick potatoes all over with a fork. Place in microwave on paper towel and cook on high for 4-5 min for one potato, and 2-3 for each additional potato. Turn over halfway through cooking. Allow to cool, cut in half lengthways and scoop out the centre, leaving a 1cm edge under the skin. Mash the flesh.
2. Melt butter in a pan and add flour. Stir for 1 min then add milk and stir until sauce thickens. Add the mashed potato, spinach and 1/4 cup cheese.
3. Fill the potato cups with the mixture and top with remaining grated cheese. Bake for 10 min. Serve with a garden salad.
