1 cup plain flour
6 cups grated zucchini
250g fetta cheese, crumbled
1-2 tablespoons olive oil
1. Place the eggs in a large bowl and whisk to combine. Add the flour and season with salt and pepper. Stir to a thick batter. Add the zucchini and fetta. Stir to combine.
2. Heat a large non-stick frying pan and add a little of the oil. Working in batches, place large tablespoons of the mixture into the hot pan. Cook on each side until golden, about 2 min each side, adding extra oil if needed.
3. Cool fritters and place them into a container. Serve with green salad and tzatziki. Garnish with lemon wedges.
