Lamb filo pastries

olive oil spray
1 onion, finely diced
400g lamb mince
2 teaspoons each ground cumin and coriander
1 teaspoon mixed spice
1 cup frozen peas
2 tablespoons fresh lemon juice
16 sheets filo pastry
2 teaspoons sesame seeds


1. Preheat oven to 200 C (180 C fan forced). Grease a baking tray. Heat a large non-stick frying pan over medium heat. Spray onion with olive oil and add to pan with mince. Cook for 5 min. Add spices, peas and juice. Cook a further 5 min. Allow to cool.

2. Spray flat sheet of filo with olive oil, top with another sheet. Place 1/8 of mixture at short end of filo. Fold to form a parcel. Place on baking tray.

3. Repeat with remaining filo and lamb mixture. Spray with olive oil and sprinkle with sesame seeds. Bake for 20 min or until golden.
