1 large onion, sliced
2 tablespoon tikka masala curry paste
1/4 cup Indian mango chutney
600g frozen green prawns, defrosted and peeled
1/2 cup no-fat plain yoghurt
zest and juice of 1 lime
1. Heat a non-stick frying pan over medium heat and spray with rice-bran oil. Cook onion for 5 min or until soft. Add curry paste, chutney and 1/2 cup water and stir to combine. Bring to a slow simmer and add prawns.
2. Cook for 3 min or until prawns are cooked. Stir in yoghurt and lime and remove from heat. Serve with jasmine rice and garnish with coriander.
