Low-Calorie Coleslaw

I apologize! I got so wrapped up in the holiday weekend that I completely forgot to send my low-cal coleslaw recipe. It's simple to make and goes well with just about any BBQ meal. When you try the recipe, you can either shred whole cabbage and carrots in the food processor, or take the easy way out (like I do!) and buy shredded bags at your local grocery store (such as Dole and other less expensive generic versions). Also, the addition of scallions and craisins are entirely optional and up to you. But in my opinion, they each provide great color and terrific flavor.

My husband and I also love adding this slaw to our wrap sandwiches. Try this: layer a whole wheat wrap with a few slices of tomato, fresh turkey breast (or grilled chicken or ham), and top with a few generous tablespoons of my coleslaw. Roll it up and dig in.

  • 6 cup of shredded cabbage with carrots
  • ¼ cup reduced fat mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon orange juice (or apple cider vinegar)
  • 3 teaspoons sugar
  • ¼ cup dried OceanSpray Craisins
  • ½ cup chopped scallions
  • ½ teaspoon kosher salt
  • Ground black pepper to taste

Place shredded cabbage and carrots in large bowl and mix with all remaining ingredients. Season with ground black pepper to taste.

Per serving: 62 calories, 1 gram fat (no saturated fat, no cholesterol!), 300 mg sodium and 2 grams fiber
