Mango coconut bread

3 eggs
1/2 cup polyunsaturated oil
2 cups plain flour
1 cup caster sugar
1 teaspoon bicarb soda
2 teaspoons vanilla essence
1/3 cup shredded coconut
2 mangoes, flesh only, mashed


1. Preheat the oven to a moderately-slow 160 C. Line an 11 x 21cm (large) loaf pan with baking paper.

2. Place eggs into a bowl and beat with hand beaters. Add remaining ingredients and beat until combined.

3. Pour the batter into the prepared pan and bake for 1hr 20 min or until skewer comes out clean. Cool 15 min before removing and slicing.
