Potato & rosemary pizzas

8 medium waxy potatoes, peeled and sliced
6 cloves garlic, sliced
1/2 teaspoon dried chilli flakes
3 teaspoons chopped fresh rosemary
4 small-medium pizza bases
2 cups grated tasty or mozzarella cheese
3/4 cup grated parmesan


1. Preheat the oven to 200 C. Toss potato with 1 teaspoon salt and 2 tablespoons oil. Spread on a lined baking tray and roast for 20-25 min, or until cooked through. Remove from oven and increase temperature to 225 C.

2. Toss the cooked potatoes in a bowl with garlic, chilli and rosemary. Spray two baking trays with oil, placing 2 pizza bases on each. Brush or spray each pizza with olive oil. Top each pizza with half the grated cheeses.

3. Arrange potatoes on top in a single layer. Sprinkle each pizza with remaining cheeses. Bake for 15 min until golden.
