Their cooking class starts with a tour of the farm with one of the local chefs and you get to pick the ingredients to make a four course Mexican meal.

Once in the (open air) kitchen, you’ll learn various techniques to make delicious and authentic Mexican. The menu changes based on what is in season, but you can be sure it will include a lesson in herbs and spices, like chillies – which are the hottest and which chilli suits which meal. This is not a just a demonstration – you’ll be chopping and stirring and blitzing under the guidance of the friendly local chefs.

A sample menu includes Tomatoes with herb oil, Tortilla Soup, locally sourced Tuna steaks with ‘Green Rice’ (blitz a few bunches of herbs, water and seasoning before cooking the rice in the herbed water – simple and delicious!), and ricotta stuffed zucchini flowers baked in the wood fired oven with quince paste.

Owner and chef Enrique Silva says it's all about fresh produce: "Here at Tamrindos we use as much of the produce we grow ourselves as possible - fresh herbs full of flavour, vegetables, fresh seafood and meat sourced from local suppliers. It's all about great quality ingredients and the simple farm to table experience!"

And at the end of class you’ll get to enjoy your meal looking out over the fields where you picked the produce that very morning, with a Tamarind Margarita in hand. Farm to table indeed.

Flora Farm is a ten-acre organic farm in the foothills of the Sierra de la Laguna Mountains in San Jose del Cabo and they have been farming without pesticides or genetically modified seeds for over ten years.

The open-air restaurant looks out over the fields, and guests can also stock up at the onsite bakery and produce store. Flora Farms is a celebrity favourite too, with Adam Levine and Behati Prinsloo trying the knot here in 2014.

In addition to growing over 100 varieties of vegetables and herbs, they also work with a local farmer "Jefe" Guadalupe Espinoza, to ensure that all the meat, poultry and eggs comes from humanely raised animals. Oh and all the bread and pastries are made fresh on site each day. This is the perfect example of 'eat local.'

If sampling all the delicious food at Flora (they’re famous for their pizzas) leaves you wanting more, try one of their regular cooking classes. You’ll learn authentic Mexican dishes - perhaps regional Mexican salsas and guacamole or Roasted Vegetable tacos - complete with your very own tortillas from scratch. No Old el Paso taco kit at your next dinner party!
