What it's like to dine on top of the world

Walking through the doors at Spago was an out of this world experience; I literally had goose bumps.

The Californian-inspired restaurant is located on the 57th floor of the Marina Bay Sands hotel in Singapore, and boasts the most breath-taking views of the island city.

To my left were the beautiful Gardens by the Bay - a sprawling park spanning over 100 hectares of reclaimed land - while on my right, the view was framed by a luxury infinity pool, the largest and highest in the world.

The restaurant’s chic opened-aired décor contrasts the cityscape surroundings, and makes you feel like you’ve crossed countries and landed in Orange Country, California. With the combination of the linen table clothes, white timber window panels and the abundance of orchids, you could easily be having brunch with Kristen Cohen or Julie Cooper (that's a ‘The OC’ reference for those playing along at home).

On arrival, I was greeted by the incredible staff who welcomed me in as if it was their own home.

I started things off with a cocktail, and while I'm not much of a drinker, I treated myself to their signature “Love Me Long Time” drink. Delicious as it is, the vodka and tangerine based cocktail certainly isn’t for the light weighted, and being a petite bloke, I could really only down half of it... and even then I was light headed.

Fortunately, I quickly washed it down with a meal, and a healthy one at that. The lunch menu - which has been curated by celebrity chef Wolfgang Puck - offers an incredible range of fresh and organic food choices including sashimi salad, soft omelette with smoked salmon and steamed red snapper.

I highly recommend starting your culinary experience with the hotel’s signature dish ‘big eye tuna tartare cones’. Containing chili aioli, soy and wasabi, your taste buds will have the experience of a lifetime.

For the main, I ordered the lobster cobb salad and a side of brussels sprouts. I was in heaven from the first mouthful. The combination of fresh avocado, tomato, blue cheese and fresh lobster was perfectly balanced. It was enough to make you feel immediately energised and refreshed.

But no meal is complete without a little dessert, which for me meant a serve of coconut gelato and caramelised nuts. It was the perfect way to end the experience; a light dish to satisfy the sweet cravings without feeling the bloated guilt of breaking the diet.
