Vegetable loaf

Ingredients

2 teaspoons rice-bran oil
1 leek, finely chopped
12 button mushrooms, sliced
3 cups grated carrot or pumpkin
1/2 cup frozen peas, defrosted
1/2 cup dried breadcrumbs
1/2 cup grated light cheese
2 teaspoons mixed dried herbs
2 eggs, lightly beaten with 1/2 cup skim milk

Method

1. Preheat the oven to 180 C. Grease and line a medium-size loaf pan with baking paper. Heat oil in a frying pan and cook leek for 2 min. Add mushrooms and cook until softened.

2. Transfer to a bowl and add remaining ingredients. Season with salt and pepper. Combine well. Pour into pan. Cover with foil and bake 30 min. Remove foil. Bake a further 20-25 min. Serve with mashed potato and greens.
