Vegetable pie

250g zucchini, grated
130g can creamed corn
1 small red pepper, finely chopped
1 small onion, finely chopped
1/2 cup grated cheese
1/2 cup self-raising flour
2 tbs oil
2 eggs, lightly beaten


1. Lightly grease a 20cm pie dish. Combine all ingredients in large bowl and mix well. Pour mixture into prepared dish.

2. Bake in moderate oven for around 45 mins, or until pie is set and browned. Stand for 5 mins before cutting pie into wedges to serve.
