But the Aussie chef still suffers from stage fright and the odd kitchen meltdown, admitting “you wouldn’t be normal if you didn’t get nervous”.

“I was just was on the Rachael Ray show and I couldn’t get the bloody lid to get on the blender,” Curtis tells Be.

“By the time I figured it out, I thought ‘Oh s**t, I’ve got burger buns on’, so I ran over, with smoke billowing out. Meanwhile I’d turned the blender on so I ended up pulverising what I wanted to give a quick blitz.”

Currently back home for the launch of his new restaurant SHARE on two Princess Cruises’ superliners, Curtis still stays true to his Aussie roots despite making the US home with his wife, actress Lindsay Price and their two sons Hudson, four, and Emerson, two.

“My kids eat Vegemite, not Weetbix so much,” Curtis says. “They both love Vegemite much to their mum’s surprise – she doesn’t get it, but I love it and so do the boys.”

While it’s all systems go at the moment for Curtis, who opened his second LA restaurant Gwen in July with brother Luke, there’s still places to tick off his travel hit list before the year is over.

“I want to go to Cuba, I might go at the end of the year,” he says. “I’d like to explore more of South America. We went to Mexico, we might go back there, I love it. The truth is, I’ve got a bracelet around my ankle chaining me to my restaurants at the moment.”
